Eating Smart With Spinach Dip



What to do with that leftover spinach / artichoke dip?  

Turn it into a delicious healthy (simple) dinner.

Here's a simple, healthy, 30 minute dinner 
using some leftover spinach dip ~ Try this:


Just put a generous scoop of spinach / artichoke dip (I like Costco's) on a piece of fish, bake it, and serve it over rice.   



I just love my little rice cooker ~ got it at Walmart for something like eight dollars.  One scoop of rice, two of chicken broth (or water), and if I get it started before the fish goes in the oven, it turns itself off when the rice is perfect (whether white or brown or mixed), and keeps it warm (automatically) till I'm ready to serve it.



It's never over-done, it's never under-done, and I don't have to watch it or worry about it.  Mr. C tried to buy me a nice (bigger, fancier) one for Christmas ~ but we returned it, 'cause it wasn't as good as this one! 




I happened to have an onion on hand, but you can skip this part if you don't have or like onion; or if you're just in a hurry;  
dot it with a little butter so the onions don't burn.



I used a firm white fish; if you can't find what you want in the fresh section, frozen works really well for this.  Halibut, swordfish, anything that's got some structure.  Fresh fish is easy to come by in Hawaii;  this is Blue Marlin.  Opah or Ono would work well, too.  




Place it in an ovenproof dish, season if you wish 
with salt & pepper or garlic salt (not too much!); 




And then add your scoop of spinach dip on top.  Cover it with foil;  

Bake it at 350 degrees for 20-30 minutes.





You will have perfectly cooked, moist fish, 
swimming in a perfectly delicious sauce, 
dotted with healthy spinach and tasty artichoke pieces.   




Place the fish on a bed of whole grain rice, 
spoon some of the sauce over it, and !  
Super simple, and you've got dinner in under 30 minutes.   

A nice side of greens goes well, or some fresh green beans or asparagus.  Although looking at the end result, perhaps carrots or something for some color is a good idea.


I think it would also be excellent with chicken breast  ~ 
the thinner ones, anyway.   I'll try that next.
