It's Almond Rocha Time


I know it's officially the Christmas season when it's Almond Rocha time!



16 pounds of butter, a twenty-five pound bag of brown sugar, two 4-pound bags of chocolate chips, and two 2-pound bags of sliced almonds (and I don't want to actually look at how many dollars) later, I'm in the Rocha business.  I love this time of year!

This is one of our very favorite holiday traditions.  I've made if for so long, I can't even remember where I first got the recipe.

And the recipient list has grown through the years; from being "just for us"; to being "a nice gift for colleagues and employees" to adding friends, then family who was distant from me, and now, new family.

It's an easy recipe, the ingredients are not complicated ~~ you cook butter and brown sugar, then pour it onto rimmed baking sheets, cover it with chocolate chips and almonds;  let it cool overnight, then break it up into chunks.  Box it, label it, ship it.  Done!

There is a technique, though, to knowing exactly when to pull it off the heat.  I've had friends throughout the year opt out of the recipient list, attempt to make it themselves......only to come back begging to be added again.  I won't mention any names here, but ironically one of those friends is named Candy!

    1. It's part of what makes Christmas special for me. I've done it now for so many years (35???) ~ it wouldn't feel like Christmas to me without spending all those hours in the kitchen ~ thinking of all the wonderful people that have blessed my life in so many ways. Gratitude is the gift I get in return.
